There is a legend about the origin of Pi county broad bean sauce.At the end of Ming
dynasty and the begining of Qing dynasty, One man from another province was on the
way to Sichuan and his broad beans fermented,because of the rainning days.As he was
poor and could not bear the loss,so he Spread them on the edge of the field,for drying
and then he ate them with fresh chilly. To his surprise,he found the taste very delicious,
later he made a living by making this sauce.
During the KangXi Period Qing dynasty .AD(1688)people continued the trade,they
set up workshops in Pi county.using local raw materials and fresh water,they began
producing broad bean sauce in large quantities.During the Xian Feng period of Qing
dynasty more shops were set up such as"Yi Feng He"$ "Yuan Feng Yuan"$ "Dao Sheng
Chang"$ "San Yi Gong"$ "De Feng Yuan"$ "He Pu Yuan".Then"Yi Feng He"and"Yuan
Feng Yuan"became an established industry in pi county.
